- Inspired by all the cottage cheese pancake recipes I’ve been seeing recently.
- Ramadan has just arrived – and this just happens to be the perfect way to get in calories and hit your protein goal for suhoor!
Suhoor can be easy, but it can also feel a bit rough if you don’t have the energy to cook so early in the morning. These pancakes are perfect for meal prep – just freeze them and heat them up whenever you want a protein-packed, flavorful breakfast.
Large, extravagant meals are not my priority. This time should be spent fostering community and strengthening our relationship with the Creator, so I want to share recipes that don’t take much time or effort but will keep you fueled and focused. 🥞
Few Tips ✮⋆˙
- This recipe is quite simple and straightforward, so I don’t have much to say in this section today other than this: It’s optional, but I highly recommend adding one chopped banana to this recipe! It adds the perfect amount of sweetness, and the overall texture is perfection, in my opinion. Of course, you can substitute it with a different fruit of your choice, but to me, banana adds the best texture.

High Protein Cottage Cheese Pancakes

Ingredients
- 42 grams Protein powder I used a peanut butter flavored protein powder if youre interested in knowing – but can be any flavor
- 90 grams All-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp cinnamon
- 30 ml sugar free maple syrup
- 2 eggs
- 240 grams low-fat cottage cheese
- 1 tsp vanilla extract
Optional additions:
- 1 small chopped banana Banana is the perfect fruit choice for these pancakes, if desired. It adds the most perfect texture and flavor to the overall recipe
- 30 grams chocolate chips
