Spiced Peach Upside Down Cake

Soft, buttery cake baked with peaches, where the sugar mixture melts into the batter just a bit, creating a warm, cozy dessert that’s perfect with vanilla ice cream and a sprinkle of cinnamon on top !!

Today we’re making a spiced peach upside-down cake with cinnamon and cloves to get everyone excited for fall baking !! I feel like this is the perfect transition dessert between summer and autumn. Summer isn’t over until the 22nd, but many of us can’t resist that September-first feeling, when pumpkin suddenly sneaks its way into our homes …. through candles, muffins, air fresheners, etc.. but I do think we can hold off on pumpkin desserts just a bit and slowly introduce some warm flavors with this spiced peach upside-down cake
This recipe is quite straight forward, and simple to put together, you’re going to love it!
Few tips ✮⋆˙
- Make sure your peaches are perfectly ripe! nice and soft, but not mushy. if they’re slightly mushy, cutting them will be a quite the challenge for you.
- Also, it’s not necessary to peel your peaches for this recipe !!
- Add the sugar mixture on top of the peaches, opposed to adding them under. I prefer to pour the sugar mixture on top of the peaches instead of directly into the bottom of the pan, because more of the buttery caramel flavor soaks through the cake instead of just sitting on top of the peaches
- Spread the sugar mixture, as well as the batter very gently over your peaches. We don’t want to disturb out peach layer
- I’d say my main tip for the batter is to not overmix it. I keep this recipe simple, just one bowl, so mix only until the ingredients are combined, nothing more.
- Keep an eye on it while it’s in the oven. You want the cake golden and set, but still soft. A toothpick should come out clean or with just a few crumbs.
- Rest only for 10 minutes, I find that to be perfect. The caramel needs a sec to settle so it doesn’t run everywhere, but we also want the cake to stay warm so it releases nicely from the pan.”

Spiced Peach Upside Down Cake
Ingredients
Topping ✮⋆˙
- 4 ripe Peaches, sliced into wedges about 500 grams of peaches
- 60 grams Salted butter 4 tbsp
- 110 grams Brown sugar 1/2 cup, packed
- 1 tsp Cinnamon
- 1/4 tsp Ground cloves
Cake batter ✮⋆˙
- 125 grams All-purpose flour 1 cup
- 65 grams Cake flour 1/2 cup
- 1 1/2 tsp Baking power
- 1/4 tsp Baking soda
- 3/4 tsp Diamond crystal fine kosher salt
- 115 grams Unsalted butter, melted 1/2 cup
- 150 grams Granulated sugar 3/4 cup
- 2 large Eggs whisked
- 1 1/2 tsp Vanilla extract
- 120 grams Sour cream 1/2 cup
- 60 ml Whole milk 1/4 cup
Instructions
- Preheat oven to 350°F (175°C)
Topping ✮⋆˙
- Grease and line a 9-inch round cake pan with parchment paper
- Arrange peach wedges in a neat spiral on top of the parchment
- In a small pan, melt 60 g butter, stir in brown sugar, cinnamon, and cloves. Pour into cake pan on top of peaches

Cake batter ✮⋆˙
- Now, in a large bowl whisk flours, baking powder, baking soda, and salt together.
- In the same bowl, add in your sugar, melted butter, and eggs — give it a quick mix making sure not to over- mix
- Lastly, fold in your vanilla, whole milk, and sour cream
- Gently add your batter on top of your peaches and sugar mixture and smooth out the top without disturbing the peaches
- Bake for about 40-45 minutes, until golden and a toothpick in the center comes out clean.
- Remember every oven preforms differently — so always keep an eye on baked goods in the oven
- Let cake rest 10 minutes, then run a knife around edges if necessary
- Flip onto a plate while still warm so the peaches release
- Serve with ice cream, a dust of cinnamon, and you're done!
