Beef and Broccoli

Tender, flavorful beef in a classic take on everyone’s favorite takeout meal—beef and broccoli, made at home in just 30 minutes!

Ingredients
  

  • 2 lbs flank steak into thin 1/4 inch pieces, cut against the grain
  • 2 tbsp avocado oil for searing beef
  • 12 oz broccoli florets 340 grams
  • 1 inch grated ginger peeled
  • 6-8 cloves grated garlic

Beef marinade ✮⋆˙

  • 1/2 tsp white pepper
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 1/2 tsp baking soda
  • 3/4 tsp garlic powder

Sauce ✮⋆˙

  • 1/4 cup soy sauce
  • 3 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1/2 cup beef broth
  • 3/4 tsp white pepper
  • 1/2 tsp ginger powder

Garnish ✮⋆˙

  • toasted sesame seeds
  • green onions

Instructions
 

First things first ✮⋆˙

  • To begin, mince your ginger and garlic as fine as you can and set aside so it's ready for when you need it.

Marinate the beef ✮⋆˙

  • In a medium bowl, combine the thinly sliced beef (cut against the grain, about 1/4 inch thick) with soy sauce, cornstarch, sesame oil, white pepper, baking soda, and garlic powder.
  • Toss to coat evenly and let the beef marinate for 15-20 minutes. (You can also marinate overnight for more flavor.)

Mix together your sauce ✮⋆˙

  • In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, rice vinegar, brown sugar, sesame oil, beef broth, white pepper, and ginger powder.

Broccoli ✮⋆˙

  • Boil a pot of water and blanch the broccoli for 1 minute. Remove and set aside.

Sear your beef ✮⋆˙

  • Heat 1-2 tbsp of avocado oil in a large stainless steel skillet or wok over medium-high heat. Add the marinated beef in a single layer.
  • Sear for 1-2 minutes on each side to develop a crust. Avoid overcrowding the pan by cooking in batches if needed- we want to develop a beautiful golden sear
  • Remove the beef and set aside. (The beef will finish cooking later in the sauce.)
  • The pan is going to have brown bits throughout—that is exactly what you want! This is technically called "fond." It's bits of our meat and slightly caramelized juices. It's going to add to the overall flavor profile of our dish. Once we add our sauce mixture, we are going to scrape the bottom of the pan as we stir with a wooden spoon. This will loosen it completely, and the bottom of your pan will be free of any brown bits—they should all blend into your sauce.
  • Lower the heat to low-medium. Add minced garlic and ginger to the skillet and stir-fry until fragrant, about 1 minute.
  • Pour the sauce mixture into the skillet and stir continuously for about 2 minutes, allowing it to thicken and bubble - making sure to scrape the bottom of your pan as you go (wooden spoon)

Lastly ✮⋆˙

  • Return the beef and broccoli to the skillet, tossing to coat everything in the sauce. Let it heat through for 1-2 minutes, then simmer on medium-high heat for another 2 minutes until the beef is perfectly tender.
  • Remove from heat and serve over steamed white rice. Garnish with sesame seeds and/or sliced green onions
